This Fiesta Kale Salad recipe came to me towards the end of Om Point's 21 Day Yoga Detox. (I suppose I started dreaming about tasty food combinations and knew that I would have a good reason to celebrate soon enough!) My goal for my very first kale salad post-cleanse was to have it be oil-free.
I. Love. Garlic. There isn’t a day that goes by when I don’t use it in some form or fashion. I’ve been a garlic addict for years, which got me thinking about whether there might be a correlation to the fact that my family and I seem to skate through cold and flu season every year unscathed. I honestly can’t think of the last time I had a cold and I’m pretty sure I’ve never had the flu. I’m also happy to say my 6-year-old hasn’t either.

I hosted Thanksgiving dinner at my house again this year. There's something very magical to me about having my family around and getting together during this time of year. I absolutely love it. Every so often, I come across one of nature’s wonders that truly amazes me. Spaghetti squash is one of those foods. I’ll never forget my reaction to watching this vegetable naturally string up to form what looks like angel hair pasta. The texture is slightly different, but nonetheless it’s delicious!
