Nubian Red Lentil Stew | Reblog from Ama Opare

Today’s post is a re-blog from my good friend and  mentor, Ama Opare from Food for the Soul. I made this stew last week, and my family loved it! It's a perfect warming meal as we move into colder months, not to mention it's super healthy. I didn't have apricots, used sweet potatoes instead of yukon golds and julienned collards for my greens, but this is the type of meal where you can get creative!

Fall Quinoa + Arugula Salad

I visited the Grant Park Farmer's Market here in Atlanta for the first time this past weekend. It was fabulous! I've been making an effort to try new grains and greens, and arugula was at almost every stand. I picked some up a few weeks ago and was pleasantly surprised at how much I enjoyed its peppery taste. That's why this quinoa + arugula salad is quickly becoming one of my favorite dishes this season!

Perfectly Simple, Simply Perfect Smoothie

As a Health Coach, one of the questions I'm often asked is, "What can I eat for breakfast?" I sometimes conduct a "breakfast experiment" with them to see what type of breakfast makes them feel best. Smoothies are always a winner because of how easy and satisfying they can be. I personally have been on a quest to consciously include a healthy dose of Omega-fatty acids in my diet. In addition to supporting proper brian development and functioning, Omega-3s are considered anti-inflammatory and are associated with a lower risk of death.

Kale and Fig Salad c/o Ama Opare

I had lunch with my friend, mentor and vegan raw food chef Ama Opare a few weeks ago and she prepared this delicious kale and fig salad. Up until that time, my only experience with figs had been the Fig Newtons I ate growing up. So, I was pleasantly surprised at how delicious fresh figs are. Figs are a summer delicacy, generally available June through September and boast a ton of nutritional benefits.In this recipe, the contrast of soft, ripe, sweet figs with a rustic balsamic dressing makes for a perfect combination of flavors.
